When I arrived I passed the history wall of the Dream Inn, built in 1963, showcasing photos that lead up to its 60th anniversary in 2023. As I walked toward my corner booth, I admired the wraparound views of the boardwalk and beach, spotting surfers attempting to catch their last waves before daybreak. My experience began with the wine list, and I chose to stay local by ordering the Domaine Eden 2019 Chardonnay from Santa Cruz to pair with the Pacific Oysters and Grilled Octopus I selected as appetizers.
In between courses, Executive Chef Trejo and Chef De Cuisine Greg Karjala came out to greet me. Their playful banter could easily serve as entertainment on the Food Network. I remarked, “I’m not sure what’s better, the cuisine or the comedy hour between you two. Is this your first time working together?” Nearly in unison, they replied, “We’ve known each other for a long time.”
While it may not be breaking news, workdays can often be tough. However, they become much more enjoyable with colleagues who bring joy to the experience, which is clearly the case with Gus and Greg. For dinner, I ordered the Short Rib of Beef accompanied by braised greens and butter-whipped potatoes, paired with Soquel Vineyards’ 2022 Pinot Noir from Santa Cruz. Before leaving, I made sure to thank Chef Gus and Chef Greg for an evening filled with exquisite food, engaging conversation, and their support for the Santa Cruz community.
